Avocado Egg Salad Toast

Ingredients
  

  • 1 ripe avocado
  • 4 hard-boiled eggs, peeled and chopped
  • 4 slices of wholemeal bread (whole grain, sourdough, or gluten-free)  
  • 1 tsp Dijon mustard
  • 1 tbsp lemon or lime juice
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp ground pepper

Instructions
 

  • Peel and chop the hard-boiled eggs into small chunks.
  • Slice the avocado in half, remove the pit, and scoop the flesh into a bowl.
  • Use a fork to mash the avocado to your preferred texture (smooth or slightly chunky).
  • Add lemon or lime juice to prevent browning.
  • Stir the chopped eggs into the mashed avocado. Add Dijon mustard to enhance the creaminess.
  • Gently mix everything together and season with salt, pepper, and smoked paprika to your liking.
  • Toast the bread slices until they are golden and crispy.
  • Spread a generous layer of the avocado egg salad mixture onto each toast.
  • Enjoy right away while the toast is warm and crunchy!
