Heat your oven to 350°F.
In a medium bowl, whisk together goat cheese, cream cheese, and sour cream until smooth. Add minced garlic, olive oil, your choice of rosemary or thyme, salt, and pepper. For a hint of sweetness, blend in a teaspoon of honey.
Pour the cheese mixture into a small, greased baking dish.
Bake for about 15-20 minutes until golden and creamy on top.
Remove from the oven, then sprinkle with chopped nuts and a drizzle of honey if preferred.
Serve immediately with toasted baguette slices, crispy crackers, or sun-dried tomatoes.
