Ingredients
  

For the Waffles:

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tbsp baking powder
  • 2 large eggs
  • 3/4 cup fresh or frozen blueberries
  • 1 cup buttermilk
  • 1/2 cup vegetable oil or melted butter
  • zest of 1 lemon
  • 1/2 tsp salt
  • 1/2 cup sugar

For the Lemon Glaze:

  • 1-2 tbsp water
  • 1 cup powdered sugar
  • 1 tbsp lemon juice
  • purple food coloring
  • yellow food coloring

For Assembly:

  • Lollipop or popsicle sticks

Instructions
 

Mix the Batter:

  • In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the eggs, buttermilk, oil (or melted butter), and lemon zest until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just incorporated. Gently fold in the blueberries, being careful not to overmix.

Cook the Waffles:

  • Heat your waffle iron according to the manufacturer’s directions.
  • Lightly grease it with non-stick spray or melted butter, if necessary.
  • Spoon enough batter to cover the iron’s surface, close the lid, and cook until golden brown and fully cooked; typically about 4–5 minutes.

Cool and Shape:

  • Transfer waffles to a wire rack to cool slightly.
  • Once they’ve cooled enough to handle, cut them into squares or your preferred shapes.
  • Carefully insert a popsicle stick into each piece. (If preferred, you can insert sticks during cooking; just be cautious of hot surfaces.)

Make the Glaze:

  • In a small bowl, whisk together powdered sugar with lemon juice and a little water until smooth and pourable.
  • Split the glaze into two bowls, tinting one with yellow food coloring and the other with purple. Stir until the colors are fully blended.

Decorate the Pops:

  • Dip each waffle pop into the glaze or drizzle both colors over the tops for a vibrant finish. Make sure they’re well coated.

Serve:

  • Allow the glaze to set for a few minutes, then enjoy your cheerful and tangy Blueberry Lemon Waffle Pops! These are delicious served warm or chilled.

Notes

  • Want an extra flavor boost? Try mixing in a dash of cinnamon or a splash of vanilla to the batter.
  • Using frozen blueberries? Toss them in frozen (no need to thaw) to help keep the batter from turning purple.
