Place the cereal in a Ziploc bag and use a rolling pin to crush it into coarse crumbs.
In a medium bowl, whisk together the eggs, heavy cream, vanilla extract, sugar, and cinnamon until fully combined.
Place two bowls on the counter: one with the egg mixture and the other with the crushed cereal.
Dip a slice of bread into the egg mixture, making sure it's fully soaked, then coat it with the crushed cereal. Continue this process until all slices are ready.
Melt 2 tablespoons of butter in a large pan over medium heat. Cook the French toast slices for 6-8 minutes, flipping halfway, until they are golden brown and crispy on the outside.
