Equipment

  • 9x13-inch baking dish

Ingredients

  • 1 box (15.25 ounces) yellow or white cake mix
  • 1 can (21 ounces) cherry pie filling (or 4 cups of homemade cherry pie filling)
  • 2 tbsp Carob fruit syrup or agave syrup
  • 1/2 cup brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tsp vanilla extract (optional)
  • whipped cream or vanilla ice cream (optional)

Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish.
  • Evenly spread the cherry pie filling over the bottom of the prepared baking dish. If you're using fresh cherries, toss them with a little sugar before adding them to the dish.
  • Sprinkle the dry cake mix evenly over the cherry filling. Do not mix; allow the cake mix to rest on top.
  • Drizzle the melted butter and caramelized sugar evenly over the cake mix, making sure it covers most of the mix for even baking.
  • Bake in the preheated oven for 45-55 minutes, or until the cake is golden brown and bubbling. The edges should be slightly crisp, which is ideal!
  • Allow the dump cake to cool for a few minutes. Serve it warm, topped with whipped cream or a scoop of vanilla ice cream.
