Break the chocolate into small, uneven pieces and place them in a bowl. Pour in 2 tablespoons of boiling water and melt the chocolate in the microwave using pulse mode for 15-second intervals.
Be careful not to overheat it; stop the microwave, stir, and check the consistency. The chocolate should be smooth, similar to condensed milk. If it remains too thick, add a little more hot water.
Pour the melted chocolate onto a shallow plate. Dip each donut into the chocolate, gently shaking it to coat the sides evenly.
Place the coated doughnut on a board with the chocolate side facing up.
Before the chocolate hardens, decorate each donuts with large embellishments like carrots and daisies. Repeat with the remaining donuts, covering and decorating them as you go.
Finish by sprinkling the donuts with colorful spring-themed sprinkles. Refrigerate for 40 minutes to allow the chocolate to set completely.
