Freezer-Friendly Bacon and Sausage Breakfast Sandwiches

These freezer breakfast sandwiches are made with English muffins, cheese, eggs, bacon or sausage patties, and are perfect for meal prepping. Simply assemble the sandwiches, wrap them in parchment paper, and store in the freezer for up to 3 months. To reheat, microwave or bake them for a quick, delicious breakfast on the go.

Ingredients
  

  • 6 English muffins, cut in half
  • 3 sausage patties
  • 3 slices bacon, cut in half
  • 6 large eggs
  • 6 slices cheese (Gouda)
  • Salt and pepper, to taste
  • Butter or cooking spray

Instructions
 

  • Cook the bacon in a skillet over medium heat until it becomes crispy. Transfer it to paper towels to drain, then set aside.
  • Using the same skillet, cook the sausage patties until thoroughly cooked. Transfer them to paper towels to drain, then set aside.
  • Place a small non-stick pan or a pan fitted with 4 egg rings over medium heat, then lightly grease it with butter or cooking spray.
  • Crack one egg into each ring and season with a pinch of salt and pepper.
  • Cook the eggs until the whites are set and the yolks reach your desired doneness (approximately 3-4 minutes). For firmer yolks, gently flip the eggs and cook for an additional 1-2 minutes.
  • Take the eggs out of the pan and let them cool slightly.
  • Lay the bottom half of each English muffin on a clean surface.
  • Place a slice of cheese on each muffin half.
  • For three sandwiches, layer a cooked egg and two bacon halves on top of each cheese-topped muffin half.
  • For the remaining three sandwiches, place a cooked egg and a sausage patty on top of each cheese-topped muffin half.
  • Place the top half of the English muffin on each sandwich to complete them.

Freeze:

  • Wrap each prepared sandwich in parchment paper to keep them secure.
  • Put the wrapped sandwiches in a large Ziploc bag or an airtight container for storage.
  • Store the sandwiches in the freezer for up to 3 months.

Reheat

  • To reheat, remove the sandwich from the parchment paper and wrap it in a paper towel.
  • Microwave on high for 1-2 minutes, or until the sandwich is heated through.
  • Alternatively, reheat in a preheated 350°F (175°C) oven for about 20 minutes, or until the sandwich is heated through.

Notes

  • Customize your sandwiches with other ingredients like avocado, spinach, or hot sauce for added flavor.
  • For a crispier muffin, you can toast the English muffin halves before assembling the sandwiches.
  • For a healthier option, use whole wheat English muffins and substitute turkey bacon or turkey sausage.
  • Allow the cooked bacon, sausage, and eggs to cool completely before assembling to prevent condensation, which can make the sandwiches soggy when frozen.
