Grapefruit Rosemary Mocktail

Ingredients
  

  • 2 cup grapefruit juice (store-bought or fresh)
  • 2 cups sparkling water or club soda
  • 1/2 cup sugar
  • 2 sprigs of fresh rosemary
  • 1 cup water (for making the syrup)
  • 1 lime, juiced
  • ice
  • grapefruit slices and rosemary sprigs for garnish (optional)

Instructions
 

Rosemary syrup

  • In a small saucepan, combine sugar, water, and rosemary sprigs. Heat over medium, stirring until the sugar fully dissolves. Remove from heat and let the syrup cool with the rosemary still in it to enhance the flavor. Once cooled, discard the rosemary sprigs.

The drink

  • Fill two glasses with ice. Pour about 2 tablespoons of rosemary syrup into each glass, adjusting for sweetness as needed.
  • Add 1 cup of grapefruit juice and the juice of half a lime to each glass.
  • Finish by pouring 1 cup of sparkling water or club soda into each glass.
  • Gently stir to combine all the flavors.
  • Decorate with a slice of grapefruit and a fresh rosemary sprig if desired. Serve immediately.
