Saint Patrick's Day Green Pancakes

Ingredients
  

For the pancakes

  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups milk ,or non-dairy alternative
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 large egg
  • 1 tbsp white vinegar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp vegetable oil
  • Green food coloring

For the topping

  • Green sprinkles
  • Whipped cream ,store-bought or homemade

Instructions
 

  • In a small bowl, mix the milk and vinegar together. Allow the mixture to rest for about 5 minutes until it thickens slightly, mimicking the texture of buttermilk.
  • In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt, then whisk until evenly blended.
  • In another bowl, whisk together the buttermilk mixture, egg, oil, vanilla extract, and a few drops of green food coloring. Add more food coloring as needed to achieve your preferred shade of green.
  • Gradually add the wet ingredients to the dry ingredients, gently stirring until just combined. Avoid overmixing; it's fine if the batter has a few lumps.
  • Preheat a lightly greased griddle or non-stick skillet over medium heat. Scoop ¼ cup of batter onto the surface for each pancake. Cook until bubbles appear on top, then flip and cook the other side until golden brown.
  • Pile the pancakes onto a plate and finish with a dollop of whipped cream and a handful of festive green sprinkles.
