Ingredients
  

Waffle batter

  • 1 1/2 cup all-purpose flour
  • 1 large egg
  • 1 tbsp baking powder
  • 1 cup almond milk
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/3 cup vegetable oil

Glaze

  • 2 tbsp milk (more if needed)
  • 1 cup powdered sugar
  • pink food coloring (for decoration)
  • 1/2 tsp vanilla extract

Chocolate dip

  • 1 cup chocolate chips
  • sprinkles (optional)

Instructions
 

Waffles

  • Use a large bowl to mix the flour, brown sugar, baking powder, and salt with a whisk.
  • In a separate bowl beat together the egg, almond milk, vegetable oil, and vanilla extract.
  • Gently fold the wet mixture into the dry ingredients, stirring only until combined; avoid overmixing.
  • Divide the batter into different bowls based on the number of colors you need. Stir in a few drops of food coloring to each portion until the desired shade/color is reached.
  • Heat your waffle maker following the manufacturer's guidelines.
  • If needed, apply a light coating of grease to prevent sticking.
  • Pour a portion of batter onto the preheated waffle maker for each waffle.
  • Close the lid and cook until the waffles turn golden brown (typically 3-5 minutes, depending on the appliance). Before the batter fully sets, insert a stick to help it hold its shape.

Glaze

  • Combine the powdered sugar and milk in a bowl, stirring until smooth. Adjust the milk to achieve your preferred consistency.
  • Split the glaze into two separate bowls. Tint one with pink food coloring while keeping the other uncolored.

Chocolate dip

  • Place the chocolate chips in a microwave-safe bowl.
  • Heat in the microwave in 30-second bursts, stirring after each interval, until the chocolate is fully melted and smooth.

Assemble

  • Dip the top of each waffle lollipop into the melted chocolate, letting any extra drip off.
  • Right away, dip or drizzle with the colored glaze, then sprinkle on toppings if desired. Use a spoon to create fun designs with the pink and white glaze!
  • Place the waffle lollipops standing up in a container or on a platter for a visually appealing display. Enjoy your vibrant and tasty spring treat!
