Ingredients
  

  • 3 cups of watermelon, (diced into bite-sized pieces)
  • 1 cup fresh blueberries
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh mint leaves, roughly chopped (mainly for garnish)

Instructions
 

  • Start by cutting the watermelon into bite-sized cubes. For a fun and festive presentation, you can scoop out the inside of the watermelon and use the rind as a serving bowl.
  • In a large mixing bowl, combine the cubed watermelon, crumbled feta, and sliced red onion. Add in the fresh blueberries to introduce a natural sweetness that complements the savory elements.
  • Drizzle the olive oil evenly over the salad, then gently toss everything together. Take care not to mash the watermelon; a light hand will help maintain the shape and texture.
  • Place the salad in the refrigerator for 10 to 15 minutes. This short chilling time helps the flavors come together and keeps the dish nice and refreshing.
  • When it’s time to serve, either spoon the salad back into the hollowed-out watermelon or arrange it on a platter. Finish with a sprinkle of fresh mint leaves.

Notes

To switch things up, you can add thinly sliced cucumbers for extra crunch or squeeze over a bit of lime juice for brightness. If you're aiming for a patriotic look, arrange the salad with blueberries and diced strawberries to create an American flag design.
